Miniature vanilla cakes with caramel sauce – recipe

Oh man, Vanilla cake with caramel sauce – it’s sooo goood. You need to try this one.

I baked these darlings in a silicone mini bunt cake pan from Habitat but of course you can use any pan, small or big, just adjust the baking time to fit the size of the pans you use, for example I baked these for 16 minutes at a 340°F/170°C but if you decide to use 3×8″ pans you need to bake the cake for 40-45 minutes.  Continue reading

Burgundy, gold and meringue

“Can you bake me a cake, I´m hosting a dinner party on Saturday?” my sister asked me last week. I shouted (almost too quickly) Yes! for I knew what kind of cake she wanted. I knew that it had to be chocolate cake with chocolate swiss meringue buttercream – ideally the same cake that I made for my dad’s 70th birthday party. My sister is a product designer and it’s so much fun working with her on designing cakes and parties. She told me that she wanted a cake similar to one that I made for the grown ups at my younger son’s first birthday party, except she wanted different colours. Continue reading

Delicious yet oh so simple chocolate cake

I would like to share with you my go-to recipe for the most delicious yet oh so simple chocolate cake.

This one has never failed me. Never ever. It´s an “all in one bowl” kind of recipe which means that you put all the ingredients in one bowl and just mix until ready – for the oven that is, don’t eat it raw 😉
If all I want to do is “throw” a chocolate cake in the oven and I just can’t be bothered with a “first mix this and then this in a separate bowl ….” kind of recipe then this is my go to recipe. But that said, I also use this one for wedding cakes and birthday cakes. I guess I use it more or less for everything except maybe cupcakes, it’s maybe not firm enough for that. Continue reading
