Today I’d like to share with you a recipe for chocolate Woopie Pie. Woopie Pie is really a cross between a cake and a cookie. It’s firmer than a cake but softer than a cookie. These are great for birthday parties where everyone gets their own pie to eat with their hands. They are also perfect for picnics and other outdoor festivities.
The cake is assembled with really any kind of frosting or icing and I must admit that it was not an easy choice this time – the opportunities are endless. Today I decided on a marshmallow vanilla frosting, and it’s a fairly soft type of frosting so I wouldn’t recommend it if you need to transport the cakes.
